What temp on the cheese?

Just a smoke tube for 4 hours.  Ideally a cool outside temperature. Even just being in the 70s, the cheese was getting quite sweaty.

Got a 20 lbs brisket at Costco. Slathered with mustard, salt and pepper on Thursday. Put on smoker 3:30 pm on Friday.

205 degrees overnight until about 195 internal temp, wrapped with butcher paper and let rest on smoker at 180 for 2 hours, and on counter 1 hour wrapped.

I also made a big batch of spicy pickles. I've been making pickles a long time and this has been my go to seasoning for awhile. You

can get it in Amazon.

Just picked up a Recteq to replace my old Traeger. The Traeger lasted 14 years with several replacment parts but I wanted to try one of these.
