It's Saturday 4-11-26.. What is everyone doing this weekend?

Making Enchiladas for the family tomorrow night......chicken, beef and butternut squash....we shall see..... Anybody got good recipes let me know.

Woke up at 4am to hit the gym but my lactose intolerant stomach had a different plan. Spent several hours on and off the throne. Missed my son's first BB game of a weekend tournament. Made it out to the second game at 11. They maxed out on runs and didn't let the other teams score. Soon after, we headed to the lake house of one his baseball teammates. Spent a couple hours there then came home to do chores and prep from my parents arrival. Now, chillin with ice packs on my ass. Tonight, the same + the fights and/or ball games.



Sunday: try for the gym in the early am. Then spray herbicide. Hit up the local pinball bar for an early BM and junk food then head over for his first game at 2pm. Second game is at 4pm and if they win, final is at 6:30PM. His team is 6-7u but they play 8-9u teams this season so we'll see how things play out. Sunday night- early to bed.

Back from Glamis ! got to hang with my buddy from back east and matt86 @matt86m for some PERFECT WEATHER - PERFECT SAND - PERFECT TEMPUTURES and some delicious Carne Asada and Brats !!!

Wnted to Stay 4 EVER! had pad 1 all to ourselves

Cooked up some Ramey's carne for the in-laws Friday. Chores and then a 1920s themed 50th bday party for a friend Saturday and playing a round of golf with our youngest today, wife and his girlfriend riding along. Had pretty much forgot what a "normal" weekend was like :ROFLMAO:
 
Andy calls me friday morning,,,What'cha doing? Me: nothing,,,,

He says "wrong answer!" me & Freddy are headed to Glamis, you should come out! Took some convincing but I hit the road, figured a 450 mile round trip on the Harley & hanging out in G for a few hours was worth it.

They were out on a ride, when they got back I came out of the trailer and surprised him! Then asked for help to pick up my bike! :lol: That glamis sand was soft!

That was my only 'day' in G this year but it was good to hang out!

I know it’s a little late… This recipe is really good.
Butternut squash enchiladas
Ingredients
2 teaspoons olive oil
3 cups 1/2-inch-diced, peeled butternut squash (from about a 2-lb. squash)
salt and pepper, to season
1 medium yellow onion, diced
3 cloves of garlic minced
1/2 jalapeno, seeded and diced
1 teaspoon cumin
1 teaspoon chili powder
1 – 15 ounce can black beans, rinsed and drained
8 yellow corn tortillas, cut into thick strips
1-15 ounce can red enchilada sauce
1 cup reduced-fat colby jack or mexican cheese (or whatever you prefer), divided
cilantro and low-fat sour cream, for serving

Instructions
Heat olive oil over medium-high heat in large oven-proof skillet. Add onions, garlic, and jalapeno and cook 2-3 minutes until onions become translucent and garlic is fragrant. Add cubed squash, cumin and chili powder and season with salt and pepper. Cook, stirring occasionally, until the squash is slightly tender, 8 to 10 minutes. You want the squash to be fork tender, but not so tender that it starts to fall apart and become mush.

Next add the black beans, corn tortilla pieces, and can of enchilada sauce and stir to combine. Reduce heat to medium-low and sprinkle in 1/2 cup of cheese. Stir again and simmer for a few minutes. Turn on your oven broiler to high. Sprinkle an additional 1/2 cup of cheese over the top of the enchilada mixture and place in oven under broiler for 3-5 minutes until cheese melts and tortilla edges become a tiny golden brown. Remove from heat and serve immediately. Feel free to add in cilantro. Serve with sour cream, guacamole, or hot sauce! Enjoy!

A little late, spent the weekend in Mother G, weather and dunes were perfect. Pulled in Thursday afternoon, we were the only group on Pad 2.5 until one other pulled in on Friday night. Dunes could not have been better.

Nice. Saw you guys pass by on a rip. Cars looked good. Such a sweet weekend.
 
Was in Vegas Friday thru Sunday, had an epic weekend with my Wife 🔥

Bruno Mars had a spectacular concert, we enjoyed ourselves the entire weekend.... had not had fun like that since pre-kids LOL.

Pretty fun weekend.

I wanted to hike Malibu Creek so I decided to camp there Friday night. It's 15 minutes from my office so that made it pretty fun. Met a snake on the hike.

When I got back I installed the rear seat release on my F350. Theres a bit of storage back there - at least enough to fit my starlink when not in use

Also had time to install the access gate on my bed rack so I can get to stuff in the front easier.

I was originally going to stay saturday night but it was going to rain so I called it early
