I own a decent sized personal and commercial insurance agency and unfortunately I do deal with these problems on a regular basis with my clients. Ask your agent for help. Take the time to read your entire insurance policy, many policies have like kind, and condition verbiage. If you have an insurance adjuster that is difficult to work with, there are third-party professional adjusters you can hire that will be paid a percentage of the claim. I would advise you not to hire an attorney for property damage claim. My experience if you show the adjuster comparables with documentation of comparable value it can go along ways. Don’t use used units from FB, but used ones from a dealer that would include used retail price plus taxes.
If you need to as a last resort, you can drop the mention that your insurance adjuster is acting in bad faith. That will scare them much more than the threat of getting an attorney and if they can’t make you whole within the policy verbiage, you can make a complaint to the insurance department for bad faith.

This! Many times, aftermarket chit isn't covered unless you specifically added the coverage for it. Also keep in mind you don't have to accept their 1st offer. Been there done that.Find out what the policy covers.... how much of the aftermarket stuff, is there a limit? Ask them about if they have an appraisal clause in the policy? You hire one, they hire one, you split the mediation costs....find comparable vehicles. Ask for their appraisal. Where did they get it? is it comps or dealer quotes.
This is great advice, I'd simply find a few comparable stock machines get the value and then find out what my policy covers in aftermarket add ons. You will obviously max that portion out as your machines are set up. I find using industry terminology as recommended above will get attention quicker than anything else.
