CNC clutch pedal stop Idea’s

Need to make a clutch stop on my CNC pedals. Was thinking of welding a barrel nut to the pedal and adding a bolt with a rubber stopper. Problem is I don’t have a ton of time to do this as I leave on Thursday. Anyone have an easy solution?
 
i use this one...its on other sites for cheaper - but this is who I bought it form in 2020.

This! Exactly this. I used 3/8 threaded rod, double nut to tighten and cut at the approximate length and then adjusted accordingly. Pretty straightforward and best mod ever!
