I saw this from Arizona, and as we got Closer to Gordon's Well (south of I-8) it got bigger, then looked like it blew again when we were well past it

Usually crop fields in Mexico

If south of I8, I’d bet it’s crop fields in Mexico. Especially is Bobalos said it was burning the week before too. After a few grow seasons they burn the fields, and till the ash into the soil. It richens the soil for the next planting season. In some cases you let that plot rest for a season.
