What is the preferred size or minimum diameter and wall thickness you would use for the tube behind the seats that the upper 5 point harness's attach to?

If it's an add on tube, 1" x .120 is what I'd use. At least use the same wall thickness as the tube it's welded to. My old chassis used the tube that was already behind the seats, but that's not technically correct to attach the belt to, it needs to be higher. There is a spec from the belt manufacturer that tells you what the range of the angle can be.

The rest of the cage is 1-1/2” 120 wall (not positive but pretty sure) so I will use that. I don’t want to add unnecessary weight but I don’t want to skimp on this tube. The tube the harnesses are attached to currently is too low and I don’t think it can be removed to save weight.

0.120 to 0.095 is 0.35lbs/foot difference. On a typical buggy, that's ~1.5lbs difference.
